Crispy potato wedges loaded with melted cheddar cheese and crunchy bacon for a comforting snack experience.

- 3 large baking potatoes
- Vegetable oil, for frying
- 1/2 teaspoon kosher salt
- 1/4 teaspoon coarse ground black pepper
- 1 1/2 cup shredded Cheddar cheese
- 8 slices bacon, cooked and crumbled
Instructions
- Preheat your oven to 350°F.
- Slice each potato in half lengthwise, then cut each half into three equal wedges.
- Heat vegetable oil in a large pot to 350°F, and fry potato wedges in batches until golden and crispy, about 5-7 minutes per batch.
- Drain excess oil on a paper towel-lined tray.
- Arrange the fried wedges on a baking sheet and season with kosher salt and black pepper.
- Sprinkle shredded Cheddar cheese and half of the crumbled bacon on top.
- Bake in the preheated oven for about 15 minutes, until cheese is melted.
- Top with remaining bacon and bake for an additional 5 minutes.
- Let cool slightly, then serve hot.
Notes
For a healthier option, bake the wedges instead of frying them. Substitute dairy cheese with vegan cheese and bacon with tempeh bacon for a plant-based version.
