- 1 cup Heavy Cream (Half and half or whole milk can be used)

- Onion Powder (To taste)
- 1 teaspoon Italian Seasoning (Adjust to taste)
- 1 teaspoon Paprika (Adjust to taste)
- 1 cup Matchstick Carrots (Fresh or frozen)
- 1 1/2 cups Uncooked Macaroni Noodles (Any small pasta shape can be used)
- 1 cup Shredded Cheddar Cheese (Consider mixing different cheese varieties)
- 1/2 cup Shredded Parmesan Cheese (Pecorino Romano is a flavorful substitute)
Instructions
- In a large pot over medium heat, warm the olive oil.
- Add the ground beef, breaking it apart with a spoon, and cook until browned. Drain excess fat if needed.
- Stir in the diced onion and minced garlic. Cook for about 5 minutes until they’re softened and fragrant.
- Sprinkle the flour over the mixture and stir for about a minute to cook out the raw flavor.
- Gradually add the chicken broth, whisking to prevent lumps. Bring to a boil.
- Once boiling, lower the heat and stir in the heavy cream, salt, pepper, onion powder, Italian seasoning, and paprika.
- Mix in the matchstick carrots and macaroni. Simmer for about 10-12 minutes until the pasta is tender.
- Stir in the cheddar and parmesan cheese until melted and creamy.
- Taste and adjust seasoning as necessary, then serve hot!
Notes
For added richness, consider mixing different cheese types, and be careful not to overcook the pasta for the best texture.
