Description

A warm, hearty bowl of Cheeseburger Macaroni Soup that combines creamy macaroni and cheese with the savory flavors of a classic cheeseburger.


Ingredients

  • 1 pound Ground Beef (Ground turkey or chicken can be used)
  • 1 medium Yellow Onion (Diced, shallots can be used)
  • 2 cloves Garlic (Minced, fresh preferred)
  • 1/4 cup All-Purpose Flour (Cornstarch is a gluten-free alternative)
  • 4 cups Chicken Broth (Vegetable broth is a vegetarian swap)
  • 1 cup Heavy Cream (Half and half or whole milk can be used)
  • Salt (To taste)
  • Pepper (To taste)
  • Onion Powder (To taste)
  • 1 teaspoon Italian Seasoning (Adjust to taste)
  • 1 teaspoon Paprika (Adjust to taste)
  • 1 cup Matchstick Carrots (Fresh or frozen)
  • 1 1/2 cups Uncooked Macaroni Noodles (Any small pasta shape can be used)
  • 1 cup Shredded Cheddar Cheese (Consider mixing different cheese varieties)
  • 1/2 cup Shredded Parmesan Cheese (Pecorino Romano is a flavorful substitute)

Instructions

  1. In a large pot over medium heat, warm the olive oil.
  2. Add the ground beef, breaking it apart with a spoon, and cook until browned. Drain excess fat if needed.
  3. Stir in the diced onion and minced garlic. Cook for about 5 minutes until they’re softened and fragrant.
  4. Sprinkle the flour over the mixture and stir for about a minute to cook out the raw flavor.
  5. Gradually add the chicken broth, whisking to prevent lumps. Bring to a boil.
  6. Once boiling, lower the heat and stir in the heavy cream, salt, pepper, onion powder, Italian seasoning, and paprika.
  7. Mix in the matchstick carrots and macaroni. Simmer for about 10-12 minutes until the pasta is tender.
  8. Stir in the cheddar and parmesan cheese until melted and creamy.
  9. Taste and adjust seasoning as necessary, then serve hot!

Notes

For added richness, consider mixing different cheese types, and be careful not to overcook the pasta for the best texture.
