  • 1 cup Shredded Cheddar Cheese (Consider mixing different cheese varieties)
  • 1/2 cup Shredded Parmesan Cheese (Pecorino Romano is a flavorful substitute)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and minced garlic, cooking until the onion is soft and translucent, about 3-5 minutes.
  3. Incorporate the ground beef, stirring until browned and no longer pink. Drain excess fat if necessary.
  4. Sprinkle in the flour and mix well to combine, allowing it to cook for 1-2 minutes.
  5. Gradually whisk in the chicken broth, ensuring there are no lumps.
  6. Stir in heavy cream, seasonings, and matchstick carrots. Bring the pot to a gentle simmer.
  7. Add uncooked macaroni noodles and cook according to package instructions until al dente.
  8. Stir in the shredded cheese until melted and well-blended.
