Ingredients
Scale
- 8 oz Cream Cheese
- 1/3 cup Powdered Sugar
- 1 teaspoon Vanilla Extract
- 1 cup Unsalted Butter
- 3/4 cup Brown Sugar
- 1/2 cup Granulated Sugar
- 1 large Egg
- 2 cups All-Purpose Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1 cup Chocolate Chips
Instructions
- In a mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- In another bowl, cream the unsalted butter, brown sugar, and granulated sugar. Add the egg and mix well, then stir in the flour, baking soda, and salt until just combined. Fold in the chocolate chips.
- Wrap the cookie dough in plastic wrap and refrigerate for about 30 minutes.
- Preheat your oven to 350°F (175°C). Scoop out a portion of the cookie dough, flatten it, and add a dollop of the cheesecake filling. Encase the filling with the dough and roll it into a ball.
- Place the cookies on a baking sheet lined with parchment paper and bake for about 12-15 minutes.
- Allow cookies to cool for a few minutes on the baking sheet before transferring to a wire rack.
Notes
For the best flavor, use full-fat cream cheese and chill your dough to control cookie spread.
