- 1 medium butternut squash, peeled and cubed
- 1 lb Italian sausage, cooked and crumbled
- 1 cup shredded mozzarella cheese
- 1 cup ricotta cheese
- 1 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: chopped herbs like thyme or parsley
Instructions
- Preheat the oven to 375°F (190°C).
- Boil the cubed butternut squash in a pot until tender, about 10-15 minutes. Drain well.
- In a mixing bowl, combine the mashed butternut squash with the cooked Italian sausage, mozzarella, ricotta, salt, and pepper. Mix until blended.
- Transfer the mixture into a greased baking dish.
- In a small bowl, mix breadcrumbs, olive oil, and Parmesan. Sprinkle this over the casserole.
- Bake in the oven for 25-30 minutes, until golden and bubbly.
- Let cool for a few minutes before serving.
Notes
For a twist, try different cheeses or add fresh herbs for extra flavor. This casserole can be made ahead and stored in the fridge or freezer.
