Description

A comforting casserole featuring creamy cheeses and flavorful sausage, all enveloped in the subtle sweetness of butternut squash.


Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 1 lb Italian sausage, cooked and crumbled
  • 1 cup shredded mozzarella cheese
  • 1 cup ricotta cheese
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: chopped herbs like thyme or parsley

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Boil the cubed butternut squash in a pot until tender, about 10-15 minutes. Drain well.
  3. In a mixing bowl, combine the mashed butternut squash with the cooked Italian sausage, mozzarella, ricotta, salt, and pepper. Mix until blended.
  4. Transfer the mixture into a greased baking dish.
  5. In a small bowl, mix breadcrumbs, olive oil, and Parmesan. Sprinkle this over the casserole.
  6. Bake in the oven for 25-30 minutes, until golden and bubbly.
  7. Let cool for a few minutes before serving.
