Description

A warm and hearty dish featuring tender chicken, zesty Cajun spices, and creamy cheese sauce, perfect for cozy nights.

Ingredients

Scale
  • 1 pound Boneless Skinless Chicken Breasts (cut into bite-sized chunks)
  • 12 oz Rotini Pasta (or substitute with penne, farfalle, or fusilli)
  • 2 tablespoons Olive Oil (can replace with canola or vegetable oil)
  • 2 tablespoons Cajun Seasoning (substitute with a milder spice mix)
  • 1 teaspoon Garlic Powder (or fresh minced garlic)
  • 1/2 teaspoon Onion Powder (omit if unavailable)
  • Salt and Pepper (to taste)
  • 4 cloves Garlic (minced)
  • 1 tablespoon Butter (or substitute with olive oil for dairy-free)
  • 1 cup Heavy Cream (or light cream, coconut cream as alternatives)
  • 1/2 cup Chicken Broth (or vegetable broth for vegetarian option)
  • 1 cup Mozzarella Cheese (shredded)
  • 1/2 cup Parmesan Cheese (grated)
  • 1/2 cup Cheddar Cheese (shredded)
  • 1/4 cup Fresh Parsley (chopped)

Instructions

  1. Cook the Pasta: Boil salted water and cook the rotini according to package instructions until al dente. Drain and set aside.
  2. Sear the Chicken: Heat olive oil in a large skillet over medium heat. Add chicken, seasoning with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook until browned and cooked through, about 7-10 minutes.
  3. Add Garlic and Sauce: Lower heat, add minced garlic and butter to the skillet. Cook for an additional minute until fragrant. Pour in heavy cream and chicken broth, stirring to combine.
  4. Combine with Cheese: Gradually add mozzarella, Parmesan, and cheddar cheeses, allowing the sauce to thicken slightly. Fold in cooked rotini until evenly coated.
  5. Serve: Garnish with freshly chopped parsley and serve hot.

Notes

Adjust seasoning based on spice tolerance. For a thicker sauce, add flour after cooking garlic before adding cream.
