- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup long-grain white rice
- 2 cups shredded sharp cheddar cheese
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- 1 cup frozen mixed vegetables
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, mix the uncooked rice, cream of chicken soup, chicken broth, onion powder, garlic powder, salt, pepper, half the cheese, and frozen mixed vegetables until well combined.
- Pour the mixture into the prepared baking dish and layer the chicken breasts on top, pressing down slightly. Sprinkle the remaining half of the cheese over the chicken if desired.
- Cover the baking dish with aluminum foil and bake for 50 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is golden and bubbly.
- Let the casserole rest for 5-10 minutes before serving.
Notes
For a slow cooker option, combine all ingredients except cheese and cook on low for 6-8 hours, adding cheese last 10-15 minutes. You can also use shredded rotisserie chicken to cut down cooking time.
