- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup long-grain white rice
- 2 cups shredded sharp cheddar cheese
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- 1 cup frozen mixed vegetables
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×13-inch baking dish.
- In a large bowl, mix the uncooked rice, cream of chicken soup, chicken broth, onion powder, garlic powder, salt, pepper, half of the cheese, and the frozen mixed vegetables.
- Layer the chicken breasts on top of the mixture in the prepared baking dish.
- Sprinkle the remaining cheese on top.
- Cover with foil and bake for 50 minutes.
- Remove the foil and bake for an additional 10-15 minutes until golden brown.
- Let it rest for 5-10 minutes before serving.
Notes
Customize with different vegetables and cheese types for variations. Letting the casserole rest helps flavors meld and makes it easier to serve.
