- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 cup heavy cream
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, cooking until softened (about 3-4 minutes).
- Add ground beef, cooking until browned and cooked through. Drain excess grease.
- Stir in diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
- Pour in milk and heavy cream, stirring gently to combine. Heat without boiling.
- Add shredded cheddar cheese, stirring until melted and smooth.
- Season with salt and pepper, simmer for another 5-10 minutes.
- Ladle the soup into bowls and serve hot, garnishing as desired.
