- 1 cup shredded mozzarella cheese
- ½ cup grated parmesan cheese
- 1 cup panko breadcrumbs
- 2 large eggs
- Salt and pepper to taste
- Fresh parsley (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix together the shredded mozzarella and grated parmesan until well blended.
- In a separate bowl, whisk the eggs together with a pinch of salt and pepper.
- Shape small amounts of the cheese mixture into golf ball-sized bites.
- Dip each ball into the egg mixture, then roll them in the panko breadcrumbs.
- Place the coated bites on a baking sheet and bake for 15-20 minutes or until golden brown.

Use fresh cheese for the best flavor; do not overcrowd the baking sheet.
