- 2 cups frozen tater tots
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1/4 cup Taco Bell chipotle sauce (adjust to taste)
- 6 large flour tortilla wraps
- Salt and pepper to taste
- Diced tomatoes, chopped green onions, and cilantro for garnish
Instructions
- Preheat the oven and cook the frozen tater tots according to package instructions until golden and crispy.
- In a skillet over medium heat, brown the ground beef seasoned with salt and pepper, and drain any excess grease.
- In a large bowl, mix together the cooked ground beef, crispy tater tots, cheddar cheese, and Monterey Jack cheese.
- Warm flour tortillas in a dry skillet or microwave for 10-15 seconds.
- Fill each tortilla with a generous amount of the beef and tater tot mixture, drizzling chipotle sauce and adding sour cream before folding and rolling.
- Place burritos seam side down in a baking dish, sprinkle with more cheese, and bake for 5-7 minutes until cheese melts.
- Garnish with diced tomatoes, green onions, and cilantro and serve hot with extra sour cream and chipotle sauce.
Notes
For a quicker meal, use pre-cooked rotisserie chicken instead of ground beef. Adjust the chipotle sauce to your heat preference.
