Description

A comforting pasta dish featuring rotini pasta enveloped in a creamy, garlicky cheese sauce topped with juicy chicken.

Ingredients

Scale
  • 340g rotini pasta
  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons chopped parsley

Instructions

  1. Season the Chicken: Begin by seasoning your chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a pan over medium-high heat and cook the chicken for 5–6 minutes on each side until golden and fully cooked. Let it rest before slicing.
  2. Cook the Pasta: Cook the rotini pasta in a pot of salted boiling water according to the package directions until al dente. Drain and set aside.
  3. Make the Sauce: In the same skillet, sauté garlic in olive oil for 1–2 minutes. Reduce heat and add heavy cream, letting it simmer gently to create a creamy sauce.
  4. Add the Cheeses: Stir in Parmesan and mozzarella cheese into the simmering cream until the sauce is creamy and smooth. Season with more salt and pepper to taste.
  5. Combine with Pasta: Toss the cooked rotini pasta into the cheese sauce until completely coated.
  6. Serve with Chicken: Top the cheesy rotini with sliced chicken, garnish with parsley and extra Parmesan if desired.
  7. Enjoy: Serve hot and savor this creamy, cheesy pasta dish!

Notes

For a lighter version, use low-fat cream and adjust cheese amounts. Fresh cheeses are recommended for better melting.
