- 1 lb lean ground beef
- 2 tbsp taco seasoning
- 1 cup shredded sharp cheddar cheese
- 1 can (15 oz) black beans, rinsed
- 1 cup bell peppers, chopped (mixed colors)
- ½ cup sour cream (for serving)
- ¼ cup green onions, chopped (for garnish)
Instructions
- Boil water in a large pot. Add salt and cook the pasta until al dente according to package instructions.
- In a skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat and stir in taco seasoning.
- Add chopped bell peppers to the skillet and sauté for about 3-4 minutes until slightly softened.
- Combine cooked pasta and black beans into the skillet mixture. Add a splash of water if needed to combine well.
- Lower heat and gradually add shredded cheddar cheese, stirring until melted and creamy.
- Serve hot topped with sour cream and garnished with green onions.
Notes
