Description

  • 1 lb lean ground beef
  • 2 tbsp taco seasoning
  • 1 cup shredded sharp cheddar cheese
  • 1 can (15 oz) black beans, rinsed
  • 1 cup bell peppers, chopped (mixed colors)
  • ½ cup sour cream (for serving)
  • ¼ cup green onions, chopped (for garnish)

Instructions

  1. Boil water in a large pot. Add salt and cook the pasta until al dente according to package instructions.
  2. In a skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat and stir in taco seasoning.
  3. Add chopped bell peppers to the skillet and sauté for about 3-4 minutes until slightly softened.
  4. Combine cooked pasta and black beans into the skillet mixture. Add a splash of water if needed to combine well.
  5. Lower heat and gradually add shredded cheddar cheese, stirring until melted and creamy.
