Ingredients

- 8 oz high-quality semi-sweet or dark chocolate, chopped
- 1 cup heavy cream
- 1 cup cherry puree
- 2 tablespoons cherry liqueur (optional)
- Cocoa powder or chopped nuts (for rolling)
Instructions
- Chop the chocolate into small pieces.
- Heat the heavy cream over medium heat until just about to boil.
- Remove the cream from heat and pour it over the chopped chocolate; let it sit for a minute.
- Stir until smooth, then mix in the cherry puree and cherry liqueur (if using).
- Chill the mixture in the refrigerator for about 2 hours until firm.
- Use a melon baller or hands to form small balls, dusting hands with cocoa powder to prevent sticking.
- Roll each truffle in cocoa powder or chopped nuts to coat.
Notes
Use quality chocolate for best flavor. Chill the mixture adequately to easily form the truffles.
