- 1 cup All-Purpose Flour
- 1 teaspoon Ground Cinnamon

- 1/4 cup Granulated Sugar for rolling
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat the unsalted butter, granulated sugar, and light brown sugar together until creamy and well-combined.
- Add the egg yolk, light corn syrup, vanilla extract, and maple extract to the butter mixture, mixing until smooth.
- In a separate bowl, whisk together the flour, cinnamon, nutmeg, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Scoop small amounts of cookie dough, roll them in the extra granulated sugar, and place them on the prepared baking sheet.
- Bake for 10-12 minutes, or until the edges are lightly golden. Allow cooling on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
For a thicker cookie, chill the dough for about 30 minutes before baking.
