Instructions
- Preheat your oven to 350°F (180°C) and line baking sheets with parchment paper.
- Beat together the softened butter, white sugar, and brown sugar until fluffy.
- Add the egg, vanilla extract, and honey (or molasses), mixing until well combined.
- Whisk together flour, cinnamon, baking soda, and salt in a separate bowl.
- Gradually mix the dry ingredients into the butter mixture.
- Fold in the quick oats and old-fashioned oats until combined.
- Form dough balls of about 1 to 1.5 tablespoons each and place them 2 inches apart on the sheets.
- Bake for about 10-13 minutes or until tops look set.
- Cool on the baking sheet for at least 10 minutes before transferring to a wire rack.
