Description

Ingredients

  • 1 teaspoon baking soda
  • 1 cup unsalted butter (softened but not melted)
  • 1 1/3 cups granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 3 tablespoons granulated sugar (for rolling)
  • 1 tablespoon cinnamon

Instructions

  1. Preheat your oven to 350°F (180°C) and line your cookie sheets with parchment paper.
  2. Mix the softened butter with 1 1/3 cups granulated sugar until fluffy.
  3. Add the egg, egg yolk, and vanilla extract, mixing until combined.
  4. Combine flour, cornstarch, cream of tartar, and baking soda in a separate bowl.
  5. Mix the dry ingredients into the wet mixture until just combined.
  6. Combine sugar and cinnamon in a shallow bowl for rolling.
  7. Shape the dough into balls and roll them in the cinnamon sugar mixture.
  8. Bake for 9-11 minutes until the tops are just set, and cool on a wire rack.
