Instructions
- Preheat your oven to 350°F (180°C) and line your cookie sheets with parchment paper.
- Mix the softened butter with 1 1/3 cups granulated sugar until fluffy.
- Add the egg, egg yolk, and vanilla extract, mixing until combined.
- Combine flour, cornstarch, cream of tartar, and baking soda in a separate bowl.
- Mix the dry ingredients into the wet mixture until just combined.
- Combine sugar and cinnamon in a shallow bowl for rolling.
- Shape the dough into balls and roll them in the cinnamon sugar mixture.
- Bake for 9-11 minutes until the tops are just set, and cool on a wire rack.
