- 8 oz wide egg noodles
- 6 cups low-sodium chicken broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onions
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Gather all ingredients together and finely chop vegetables for even cooking.
- In a large pot over medium heat, add a little oil and sauté chopped onions until translucent, about 3-4 minutes.
- Add chicken breasts, chopped carrots, and celery, cooking until chicken is no longer pink in the center (5-6 minutes).
- Add chicken broth, minced garlic, thyme, bay leaves, salt, and pepper. Bring to a gentle simmer.
- Add egg noodles and stir well. Cook according to package instructions until noodles are tender (about 6-8 minutes).
- Remove from heat and serve hot, garnished with fresh herbs if desired.
