Ingredients

  • 1 cup cooked brown rice
  • 1 cup diced chicken breast
  • 1 medium sweet potato, peeled and cubed
  • 2 cups spinach or kale
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional toppings: avocado, sesame seeds, or a squeeze of lime

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add cubed sweet potatoes and cook until tender, about 10 minutes, stirring occasionally.
  3. Add the diced chicken, garlic powder, salt, and pepper, cooking until the chicken is no longer pink, about 5-7 minutes.
