Description

A quick and delicious stir-fry featuring tender chicken, crisp bok choy, vibrant bell peppers, and crunchy carrots, all tossed in a flavorful sauce.


Ingredients

  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons vegetable oil
  • 23 heads of baby bok choy, chopped
  • 1 red bell pepper, sliced
  • 1 medium carrot, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon hoisin sauce (optional)
  • 1 teaspoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch (optional)
  • Cooked rice or noodles (for serving)
  • Sesame seeds (optional, for garnish)
  • Green onions, chopped (optional, for garnish)

Instructions

  1. Prepare the Ingredients: Slice the chicken, chop the bok choy, slice the bell pepper, julienne the carrot, mince the garlic, and grate the ginger.
  2. Make the Sauce: In a bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, rice vinegar, sesame oil, and red pepper flakes. For a thicker sauce, mix cornstarch with water and add it to the sauce. Set aside.
  3. Cook the Chicken: Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add chicken, cook for 4-5 minutes until browned and cooked through. Remove and set aside.
  4. Stir-Fry the Vegetables: In the same skillet, add oil if needed. Add garlic, ginger, and bell pepper. Stir-fry for 1-2 minutes until fragrant.
  5. Add Bok Choy and Carrot: Add bok choy and carrot. Cook for 3-4 minutes until bok choy wilts but remains crispy.
  6. Combine and Serve: Return chicken to skillet, pour the sauce over everything, stir to coat, and cook for another 2-3 minutes. Serve immediately over rice or noodles and garnish as desired.

Notes

For uniform cooking, slice ingredients evenly and avoid overcrowding the pan during stir-frying.
