Ingredients

  • 1 cup Brown rice
  • 1 can Black beans, rinsed and drained
  • 1 cup Corn, frozen or fresh
  • 1 cup Diced tomatoes
  • 1 Avocado, sliced
  • 1 cup Shredded lettuce
  • 1/2 cup Shredded cheese
  • 1/4 cup Cilantro, chopped
  • 1 tablespoon Olive oil
  • 1 tablespoon Taco seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the brown rice according to package instructions (usually 20-25 minutes).
  2. Heat olive oil in a skillet over medium heat. Add diced chicken, taco seasoning, salt, and pepper. Cook until browned and cooked through, about 7-10 minutes.
