- 1 cup Brown rice
- 1 can Black beans, rinsed and drained
- 1 cup Corn, frozen or fresh
- 1 cup Diced tomatoes
- 1 Avocado, sliced
- 1 cup Shredded lettuce
- 1/2 cup Shredded cheese
- 1/4 cup Cilantro, chopped
- 1 tablespoon Olive oil
- 1 tablespoon Taco seasoning
- Salt and pepper to taste
Instructions
- Cook the brown rice according to package instructions (usually 20-25 minutes).
- Heat olive oil in a skillet over medium heat. Add diced chicken, taco seasoning, salt, and pepper. Cook until browned and cooked through, about 7-10 minutes.
- Layer cooked rice, chicken, black beans, corn, diced tomatoes, and shredded lettuce in bowls.
- Top with sliced avocado, shredded cheese, and cilantro.
