Ingredients

  • 1/2 cup salsa
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat the olive oil in a skillet over medium heat. Add the shredded chicken, cumin, chili powder, salt, and pepper. Stir to combine and heat through until the chicken is warmed and the spices are aromatic.
  2. Layer the cooked rice as the base in serving bowls, followed by the sautéed chicken, black beans, corn, diced tomatoes, and diced avocado on top.
  3. Top with shredded cheese and salsa, allowing the cheese to melt slightly from the warmth of the other ingredients.
