- 2 boneless, skinless chicken breasts, diced
- 3 tablespoons vegetable oil, divided
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch
- 1 teaspoon ginger, minced
- 2 cloves garlic, minced
- 1 onion, sliced
- 1 cup cabbage, shredded
- 1 cup carrots, julienned
- 1 red bell pepper, sliced
- 3 cups cooked chow mein noodles
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- 2 tablespoons sesame oil
Instructions
- In a bowl, marinate chicken with 1 tablespoon of vegetable oil, soy sauce, oyster sauce, and cornstarch for at least 15 minutes.
- Heat a large skillet or wok over medium-high heat, add remaining vegetable oil, and cook the marinated chicken for 5-7 minutes until cooked through.
- Remove chicken from the skillet and set aside. In the same skillet, stir-fry minced ginger and garlic for about 30 seconds until fragrant.
- Add sliced onion and cook for about 2 minutes until softened, then add cabbage, carrots, and bell pepper; stir-fry for 3-4 minutes keeping veggies crisp.
- Return the cooked chicken to the skillet, add chow mein noodles, season with salt and pepper, and drizzle with sesame oil. Stir to combine.
- Garnish with chopped green onions and serve hot.
Notes
Consider marinating the chicken longer for enhanced flavor. Customize the vegetables based on preference.
