Ingredients

  • 2 boneless, skinless chicken breasts, diced
  • 3 tablespoons vegetable oil, divided
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon ginger, minced
  • 2 cloves garlic, minced
  • 1 onion, sliced
  • 1 cup cabbage, shredded
  • 1 cup carrots, julienned
  • 1 red bell pepper, sliced
  • 3 cups cooked chow mein noodles
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste
  • 2 tablespoons sesame oil

Instructions

  1. In a bowl, marinate chicken with 1 tablespoon of vegetable oil, soy sauce, oyster sauce, and cornstarch for at least 15 minutes.
  2. Heat a large skillet or wok over medium-high heat, add remaining vegetable oil, and cook the marinated chicken for 5-7 minutes until cooked through.
  3. Remove chicken from the skillet and set aside. In the same skillet, stir-fry minced ginger and garlic for about 30 seconds until fragrant.
  4. Add sliced onion and cook for about 2 minutes until softened, then add cabbage, carrots, and bell pepper; stir-fry for 3-4 minutes keeping veggies crisp.
  5. Return the cooked chicken to the skillet, add chow mein noodles, season with salt and pepper, and drizzle with sesame oil. Stir to combine.
  6. Garnish with chopped green onions and serve hot.

Notes

Consider marinating the chicken longer for enhanced flavor. Customize the vegetables based on preference.
