- 2 cups cooked chicken, shredded
- 4 medium potatoes, diced
- 2 cups corn (fresh, frozen, or canned)
- 1 onion, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 4 slices bacon, cooked and crumbled
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, cook the bacon slices until crispy. Remove and crumble, leaving the drippings in the pot.
- Add the diced onion and potatoes to the drippings. Sauté for about 5 minutes until translucent.
- Stir in chicken broth and corn. Cook for about 15 minutes until the potatoes are tender.
- Add shredded chicken and heavy cream, mixing well. Simmer for another 5-10 minutes.
- Season with salt and pepper to taste, then serve hot garnished with crumbled bacon and sliced green onions.
Notes
Feel free to use rotisserie chicken for convenience, or adjust the recipe with turkey bacon for a leaner option. You can also mash some potatoes for thicker chowder.
