Description

A comforting creamy soup featuring tender shredded chicken, sweet corn, and hearty potatoes, perfect for any season.


Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups corn (fresh, frozen, or canned)
  • 2 cups potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 slices bacon, cooked and crumbled
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Olive oil or butter for cooking

Instructions

  1. In a large pot, heat olive oil or butter over medium heat. Add the chopped onion and minced garlic and sauté until the onion becomes translucent.
  2. Add the diced potatoes and corn to the pot, stirring to combine.
  3. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
  4. Stir in the cooked chicken and heavy cream, and allow it to heat through.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with crumbled bacon and sliced green onions.

Notes

Use rotisserie chicken to save time. For a thicker chowder, mash some of the potatoes and stir them back in. Adjust seasoning as needed.
