- 2 cups cooked chicken, shredded
- 4 cups corn (fresh, frozen, or canned)
- 2 cups potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 4 slices bacon, cooked and crumbled
- 2 green onions, sliced
- Salt and pepper to taste
- Olive oil or butter for cooking
Instructions
- In a large pot, heat olive oil or butter over medium heat. Add the chopped onion and minced garlic and sauté until the onion becomes translucent.
- Add the diced potatoes and corn to the pot, stirring to combine.
- Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
- Stir in the cooked chicken and heavy cream, and allow it to heat through.
- Season with salt and pepper to taste.
- Serve hot, garnished with crumbled bacon and sliced green onions.
Notes
Use rotisserie chicken to save time. For a thicker chowder, mash some of the potatoes and stir them back in. Adjust seasoning as needed.
