Description

A flavorful and quick meal that combines the classic tastes of fajitas with creamy pasta, featuring tender chicken, bell peppers, and aromatic spices.

Ingredients

Scale
  • 8 oz pasta of your choice
  • 2 chicken breasts, sliced
  • 1 bell pepper, sliced (any color)
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream or a healthier alternative
  • 1 cup chicken broth
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh cilantro for garnish

Instructions

  1. Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions. Drain and set aside.
  2. Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add sliced onions and bell peppers and sauté until soft, about 5-7 minutes.
  3. Cook the Chicken: Push the vegetables to the side and add sliced chicken to the skillet. Season with taco seasoning, salt, and pepper. Cook until the chicken is golden brown and cooked through, about 5 minutes.
  4. Combine Ingredients: Stir in minced garlic, chicken broth, and heavy cream. Bring to a gentle simmer and cook for another 5 minutes, allowing the sauce to thicken slightly.
  5. Add Pasta: Finally, add the cooked pasta to the skillet, tossing it to combine well with the creamy sauce and chicken mixture. Heat through for a couple of minutes.
  6. Serve: Garnish with fresh cilantro before serving. Enjoy your Chicken Fajita Pasta hot!

Notes

For a lighter dish, substitute heavy cream with Greek yogurt. Can be made ahead and reheated, making it perfect for meal prep.
