- 8 oz pasta (penne or rotini)
- 2 tablespoons olive oil
- 1 pound chicken breast, sliced
- 1 bell pepper (red or green), sliced
- 1 small onion, sliced
- 2 teaspoons fajita seasoning
- 1 cup diced tomatoes (canned or fresh)
- Salt and pepper, to taste
- Fresh cilantro, for garnish (optional)
- Lime wedges, for serving (optional)
Instructions
- Cook the pasta in a large pot of boiling salted water according to package instructions until al dente, then drain and set aside.
- Sauté the chicken in a large skillet with olive oil over medium-high heat until browned and cooked through, about 6-7 minutes.
- Add the bell pepper and onion to the skillet and sauté until tender, about 4-5 minutes.
- Season with fajita seasoning, salt, and pepper, mixing in the diced tomatoes and cooking for another 2-3 minutes.
- Combine the cooked pasta with the skillet mixture, tossing until well mixed and heated, adding a bit of pasta water if needed.
- Serve garnished with fresh cilantro and lime wedges on the side.
Notes
For a lighter dish, consider using zucchini noodles or spaghetti squash. Adjust the spice level by using less fajita seasoning as needed.
