Description
Quick and delicious chicken fajitas with a vibrant combination of chicken, bell peppers, and spices, all wrapped in warm tortillas.

- 2 teaspoons chili powder
- 1 teaspoon paprika
- 1 teaspoon kosher salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon sugar
- 1/4 teaspoon cayenne pepper
- 1 tablespoon cornstarch
- 1 1/2 pounds boneless, skinless chicken breasts
- 1/4 cup plus 2 tablespoons canola oil, divided
- 2–3 limes
- 1/2 green bell pepper, cored and seeded
- 1/2 red bell pepper, cored and seeded
- 1/2 yellow bell pepper, cored and seeded
- 1 yellow onion, peeled and halved
- 12 flour tortillas
Instructions
- Mix together chili powder, paprika, kosher salt, onion powder, cumin, garlic powder, sugar, cayenne pepper, and cornstarch in a small bowl. Add 1/4 cup of canola oil and the juice of one lime, whisk well, and set aside.
- Slice the chicken into 1/4-inch thick strips, marinate with 2/3 of the marinade.
- Toss sliced bell peppers and onion with remaining marinade and set aside.
- Heat 1 tablespoon canola oil in a skillet over medium-high heat, add vegetables, and cook for 4-5 minutes.
- Add remaining oil and cook chicken undisturbed for about 4 minutes on each side.
- Return vegetables to the skillet, cooking everything together for another 2-3 minutes.
- Serve immediately with warm flour tortillas and desired toppings.
Notes
Marinate chicken for at least 20 minutes for enhanced flavor.
