Description

A delightful comfort food combining tender chicken, creamy mashed potatoes, sweet corn, and rich gravy, topped with gooey melted cheese.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cups mashed potatoes (store-bought or homemade)
  • 1 cup corn kernels (canned or frozen)
  • 1 cup shredded cheddar cheese
  • 1 cup prepared gravy (chicken or brown)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. In a medium bowl, mix the chicken pieces with garlic powder, onion powder, paprika, salt, and pepper until well-coated.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken pieces and cook until browned and cooked through, about 7-9 minutes.
  3. In a medium saucepan, heat the gravy according to package instructions or homemade recipe.
  4. If using frozen corn, cook according to package instructions. If using canned corn, drain and heat until warm.
  5. Prepare or reheat mashed potatoes until smooth and hot.
  6. To assemble, add a generous scoop of mashed potatoes to the bottom of each serving bowl, then top with cooked corn followed by a portion of chicken.
  7. Drizzle warm gravy over the chicken and potatoes, then sprinkle shredded cheese on top. Garnish with fresh parsley if desired and serve immediately.

Notes

Feel free to mix additional spices or use leftover chicken for convenience. Consider homemade gravy for richer flavor.
