- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 cups mashed potatoes (store-bought or homemade)
- 1 cup corn kernels (canned or frozen)
- 1 cup shredded cheddar cheese
- 1 cup prepared gravy (chicken or brown)
- Chopped fresh parsley for garnish (optional)
Instructions
- In a medium bowl, mix the chicken pieces with garlic powder, onion powder, paprika, salt, and pepper until well-coated.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken pieces and cook until browned and cooked through, about 7-9 minutes. Remove chicken from the skillet and set aside.
- In a medium saucepan, heat the gravy according to package instructions or a homemade recipe.
- If using frozen corn, cook according to package instructions. If using canned corn, drain and heat until warm.
- Prepare or reheat the mashed potatoes until smooth and hot.
- To build the bowls, start with a scoop of mashed potatoes, top with corn and chicken, then drizzle with warm gravy and sprinkle shredded cheese on top. Garnish with fresh parsley.

Use different types of cheese for variations in flavor. Prep the chicken, potatoes, and corn ahead of time for quick assembly.
