Description

A delightful Italian dish featuring tender chicken breasts pan-fried to a golden brown and smothered in a bright, zesty lemon-caper sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 4 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 1 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the chicken breasts generously with salt and pepper on both sides.
  2. Dredge each chicken breast in the flour, shaking off any excess.
  3. In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat.
  4. Add the chicken breasts and cook for 3-4 minutes on each side until golden brown, then remove from the skillet.
  5. In the same skillet, add chicken broth, lemon juice, and capers; bring to a simmer.
  6. Add the remaining butter to the sauce and stir until melted.
  7. Return the chicken to the skillet to coat in the sauce for a minute.
  8. Plate the chicken hot, garnished with freshly chopped parsley.

Notes

Use fresh lemon juice for better flavor and allow chicken to rest after cooking to retain moisture.
