- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1/2 cup all-purpose flour
- 4 tablespoons olive oil
- 4 tablespoons unsalted butter
- 1 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup capers
- 2 tablespoons fresh parsley, chopped
Instructions
- Season the chicken breasts generously with salt and pepper on both sides.
- Dredge each chicken breast in the flour, shaking off any excess.
- In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat.
- Add the chicken breasts and cook for 3-4 minutes on each side until golden brown, then remove from the skillet.
- In the same skillet, add chicken broth, lemon juice, and capers; bring to a simmer.
- Add the remaining butter to the sauce and stir until melted.
- Return the chicken to the skillet to coat in the sauce for a minute.
- Plate the chicken hot, garnished with freshly chopped parsley.
Notes
Use fresh lemon juice for better flavor and allow chicken to rest after cooking to retain moisture.
