- 12 oz chicken sausage, sliced into ½-inch rounds
- 1 cup uncooked orzo pasta
- 4 cups broccoli florets, cut into bite-sized pieces
- 1 medium onion, diced (about 1 cup)
- 3 cloves garlic, minced
- 2½ cups chicken broth
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes (optional)
- ½ cup grated Parmesan cheese
- 2 tablespoons fresh lemon juice
- Salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced chicken sausage and cook until browned, about 3 to 4 minutes. Set aside.
- Add the remaining tablespoon of olive oil and the diced onion to the skillet. Sauté until translucent, about 2 to 3 minutes. Stir in garlic, Italian seasoning, and optional red pepper flakes; cook for 30 seconds.
- Add uncooked orzo to the skillet and toast for 1 to 2 minutes. Pour in chicken broth, scraping any browned bits from the skillet. Bring to a simmer, cover, and cook for about 8 minutes.
- Stir in broccoli and return the sausage to the skillet. Cover and cook for an additional 4 to 5 minutes until broccoli is tender but crisp.
- Remove from heat, mix in Parmesan cheese and lemon juice. Season with salt and black pepper to taste.
Notes
For variations, you can substitute chicken sausage with turkey or plant-based sausage, or adjust the spices based on your preference.
