Ingredients

  • 2 chicken breasts
  • 2 cups rice
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Chopped parsley, for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, then sear them until cooked through, about 6-7 minutes per side. Remove from the skillet and set aside.
  2. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  3. Stir in the rice and cook for 1-2 minutes, allowing it to toast slightly.
  4. Pour in the chicken broth and bring to a boil. After boiling, reduce heat, cover, and let it simmer for about 15 minutes until the rice is tender.
  5. Stir in the heavy cream and Parmesan cheese, mixing until creamy.
  6. Slice the chicken and return it to the skillet. Mix everything together.
  7. Serve warm, garnished with chopped parsley.

Don’t overcook the chicken, and use fresh garlic for the best flavor. Consider garnishing generously with parsley.
