Description

A delightful combination of juicy marinated chicken served with creamy tzatziki sauce, fresh cucumbers, and bright cherry tomatoes in a satisfying bowl.


Ingredients

  • 2 chicken breasts, marinated
  • 1 cup Greek yogurt
  • 1 cucumber, grated
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Cooked quinoa or rice
  • Cherry tomatoes, halved
  • Olives
  • Fresh herbs (like dill or parsley) for garnish

Instructions

  1. Marinate the chicken breasts in your choice of marinade for at least 30 minutes.
  2. Prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and pepper in a bowl and refrigerate.
  3. Cook the marinated chicken on a grill or skillet until fully cooked, approximately 6-7 minutes per side until internal temperature reaches 165°F (75°C).
  4. Allow the chicken to rest for a few minutes before slicing it into bite-sized pieces.
  5. In each bowl, layer cooked quinoa or rice, sliced chicken, a dollop of tzatziki, and scatter cherry tomatoes and olives on top.
  6. Garnish with fresh herbs and serve immediately.

Notes

Marinating overnight enhances flavor. Tzatziki can be prepared a day ahead. Use high-quality, fresh produce.
