Description

Juicy, smoky chipotle chicken marinated in a blend of chipotle peppers, lime juice, and spices perfect for tacos, burrito bowls, or grilling.


Ingredients

2 lbs boneless skinless chicken thighs

3 chipotle peppers in adobo sauce, chopped

2 tbsp adobo sauce (from the can)

3 cloves garlic, minced

2 tbsp olive oil

2 tbsp lime juice

1 tsp ground cumin

1 tsp smoked paprika

1 tsp oregano

1 tsp salt

1/2 tsp black pepper


Instructions

1. In a large bowl, combine chipotle peppers, adobo sauce, garlic, olive oil, lime juice, cumin, paprika, oregano, salt, and pepper.

2. Add chicken thighs and coat thoroughly in the marinade.

3. Cover and refrigerate for at least 30 minutes, preferably 2–4 hours for deeper flavor.

4. Preheat grill or skillet to medium-high heat.

5. Cook chicken for 5–7 minutes per side, or until internal temperature reaches 165°F (74°C).

6. Let rest for 5 minutes before slicing or serving.

7. Serve with rice, tortillas, or fresh salad.

Notes

For extra heat, add an additional chipotle pepper or a pinch of cayenne.

You can also bake at 400°F (200°C) for 20–25 minutes instead of grilling.

Leftovers are great for meal prep and can be stored in the fridge for up to 4 days.
