Description
Rich, fudgy chocolate brownie cookies that combine the best parts of brownies and cookies. Crisp edges, soft centers, and an intense cocoa flavor.
Ingredients
200g dark chocolate (60% cocoa or higher)
100g unsalted butter
2 large eggs
150g granulated sugar
50g brown sugar
80g all-purpose flour
25g cocoa powder
Pinch of salt
Optional: 100g chocolate chips, 80g chopped nuts, caramel drizzle
Instructions
1. Melt the dark chocolate and butter together until smooth, then allow to cool slightly.
2. Whisk the eggs with both sugars until pale and thick.
3. Fold the cooled chocolate mixture into the egg mixture gently.
4. Sift together the flour, cocoa powder, and salt, then fold into the wet ingredients until just combined.
5. Stir in any optional mix-ins like chocolate chips or nuts.
6. Scoop the dough onto a parchment-lined tray and chill for 25 minutes.
7. Bake at 350°F (175°C) for 10–12 minutes until glossy with fine cracks.
8. Cool for 5 minutes on the tray before transferring to a rack.
Notes
Chilling the dough before baking helps maintain shape and improves texture.
You can freeze both baked cookies and raw dough for up to 3 months.
For a flavor boost, add 1 teaspoon of espresso powder to the batter.
