Ingredients
1 cup unsalted butter, softened
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs
2 tsp vanilla extract
1 1/2 cups all-purpose flour
3/4 cup Dutch-process cocoa powder
1 tsp baking soda
1/4 tsp salt
8 oz cream cheese, softened
1/4 cup granulated sugar (for filling)
1 tsp vanilla extract (for filling)
1 tbsp sour cream (optional)
Instructions
1. Beat cream cheese with sugar, vanilla, and optional sour cream; chill filling.
2. Cream butter with brown and granulated sugars until fluffy; beat in eggs and vanilla.
3. Whisk cocoa powder, flour, baking soda, and salt in a separate bowl.
4. Fold dry ingredients into butter mixture until just combined.
5. Flatten a portion of dough, add cheesecake filling, top with another dough piece, and seal edges.
6. Chill filled dough balls for at least 30 minutes.
7. Bake at 350°F (175°C) for 10–12 minutes, until edges are set and centers are soft.
8. Cool for 5 minutes before transferring to a rack; serve warm or cooled.
Notes
Chill time is essential to keep filling from leaking.
Use high-quality cocoa powder for the best flavor.
Store cookies in an airtight container for up to 2 days at room temperature, 5 days in the fridge, or 2 months in the freezer.
