Description
Chocolate chip cookie cups are the perfect bite sized dessert. Soft on the inside, golden on the outside, and filled with everything from mousse to whipped cream. They are easy to customize for any celebration or cozy evening treat.
Ingredients
2 and 1/4 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter (softened)
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
2 teaspoons vanilla extract
1 and 1/2 cups semi sweet chocolate chips
Butter or spray for greasing muffin tin
Instructions
1. Preheat oven to 350 degrees Fahrenheit and prepare a standard muffin tin.
2. In a bowl, mix the flour, baking soda, and salt. Set aside.
3. In a large bowl, beat softened butter with both sugars until fluffy and light.
4. Add eggs one at a time, then stir in vanilla extract.
5. Slowly mix in the dry ingredients until fully combined.
6. Fold in the chocolate chips using a spatula or spoon.
7. Chill the dough in the fridge for 30 minutes to firm.
8. Scoop dough into greased muffin cups and press gently in the center to form a well.
9. Bake for 13 to 15 minutes or until edges are golden brown.
10. Cool in the tin for 10 minutes, then carefully remove and cool completely on a wire rack.
11. Fill cookie cups with toppings of choice before serving.
Notes
Do not skip chilling the dough, it helps the cookie cups hold their shape.
Fillings like whipped cream or mousse should be added just before serving for best results.
Store undecorated cups in an airtight container for up to 3 days or freeze for longer storage.
