Description

A luscious 3-layer Chocolate Covered Strawberry Cheesecake made with a buttery crust, creamy filling, fresh strawberry topping, and rich chocolate ganache.


Ingredients

Scale

1½ cups graham cracker crumbs

6 tbsp unsalted butter, melted

¼ cup granulated sugar

24 oz cream cheese (full-fat), softened

1 cup white sugar

3 large eggs

½ cup sour cream or heavy cream

1 tsp pure vanilla extract

1½ cups sliced fresh strawberries

2 tbsp sugar (for topping)

1 tbsp lemon juice

1 tsp cornstarch + 2 tsp water (optional, for thickening)

1 cup semi-sweet chocolate chips or chopped chocolate

½ cup heavy cream


Instructions

1. Preheat oven to 325°F (163°C).

2. Mix graham cracker crumbs, melted butter, and sugar for crust. Press into 9-inch springform pan and bake for 10 minutes. Let cool.

3. Beat cream cheese until smooth, add sugar and vanilla, then eggs one at a time. Stir in sour cream.

4. Pour filling over crust and smooth the top.

5. Wrap pan with foil and place in a water bath. Bake for 55 minutes. Let rest in oven 1 hour. Cool fully, then refrigerate overnight.

6. Cook strawberries, sugar, and lemon juice in a saucepan for 8–10 mins. Add cornstarch slurry if thicker texture is needed. Cool completely.

7. Make ganache by heating cream and pouring over chocolate. Let sit 2 mins, then stir until smooth.

8. Top cheesecake with strawberry layer, then pour ganache over. Decorate with extra berries. Chill before slicing.

Notes

Use a hot knife for clean slices.

Chill cheesecake overnight for best texture.

Garnish with mint or edible flowers for a festive look.
