Description

Ingredients

  • 1 cup fresh strawberry purée
  • 1 ½ cups fresh strawberries, hulled
  • 1 tbsp 1–2 sugar (optional)
  • ¾ cup heavy cream
  • 6 oz semi-sweet or dark chocolate, chopped
  • 12 fresh strawberries, washed and dried
  • ½ cup semi-sweet chocolate chips or chopped chocolate
  • 1 tsp coconut oil or shortening (optional)

Instructions

  1. Prepare the Strawberry Purée: Wash, hull, and blend strawberries into a smooth purée, strain if desired. Reserve 1 cup for the batter.
  2. Make the Crust: Preheat oven to 325°F (163°C). Combine chocolate cookie crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan and bake for 10 minutes. Let cool.
  3. Prepare the Cheesecake Filling: Beat cream cheese until smooth, then gradually add sugar, vanilla, and lemon juice. Mix in eggs one at a time, followed by sour cream and strawberry purée.
  4. Bake in a Water Bath: Pour filling over crust, place in a larger roasting pan, and fill with hot water. Bake for 55–65 minutes until edges are set and the center is slightly jiggly. Cool in the oven for an hour.
  5. Prepare the Ganache: Heat heavy cream and pour over chopped chocolate. Stir until smooth. Pour over cooled cheesecake. For chocolate-dipped strawberries, melt chocolate with coconut oil, dip strawberries, and refrigerate.
  6. Final Touches: Arrange chocolate-dipped strawberries on the cheesecake. Garnish with mint leaves or white chocolate drizzle before serving.
