- 1 cup buttermilk
- 1 cup fresh raspberries
- 1 cup heavy cream
- ½ cup powdered sugar
- 8 oz dark chocolate, melted
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- Combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
- Add the softened butter, eggs, and vanilla extract. Mix until just combined.
- Gradually mix in the buttermilk to achieve a smooth batter.
- Divide the batter between the prepared pans and bake for 25-30 minutes; check for doneness with a toothpick.
- Let the cakes cool completely in the pans before turning them out onto a wire rack.
- For the mousse, whip the heavy cream with powdered sugar until soft peaks form.
- Gently fold in the melted chocolate and raspberries until well combined.
- Assemble the cake by placing one layer on a serving plate, spreading mousse over it, and topping with the second layer and remaining mousse.
- Garnish with additional raspberries and chill before serving.
