Description

Ingredients

  • 1 cup buttermilk
  • 1 cup fresh raspberries
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 8 oz dark chocolate, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. Add the softened butter, eggs, and vanilla extract. Mix until just combined.
  4. Gradually mix in the buttermilk to achieve a smooth batter.
  5. Divide the batter between the prepared pans and bake for 25-30 minutes; check for doneness with a toothpick.
  6. Let the cakes cool completely in the pans before turning them out onto a wire rack.
  7. For the mousse, whip the heavy cream with powdered sugar until soft peaks form.
  8. Gently fold in the melted chocolate and raspberries until well combined.
  9. Assemble the cake by placing one layer on a serving plate, spreading mousse over it, and topping with the second layer and remaining mousse.
  10. Garnish with additional raspberries and chill before serving.
