Ingredients

  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate ganache (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, cocoa powder, baking powder, and salt in a bowl.
  3. In another bowl, beat the softened butter, granulated sugar, and brown sugar until creamy, then add the egg and vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  5. Roll the dough into small balls (about 1 inch) and place them on the baking sheet.
  6. Make an indentation in the center of each ball using your thumb.
  7. Bake for 10-12 minutes until the edges are set but centers are still soft.
  8. Fill the thumbprints with chocolate ganache while warm.
  9. Let the cookies cool completely on a wire rack before serving.
