Description

A delightful chocolate dessert traditionally made for Christmas, featuring a rich chocolate sponge cake rolled with a creamy filling and adorned with festive decorations.


Ingredients

  • 4 large eggs
  • 100g granulated sugar
  • 50g all-purpose flour
  • 50g cocoa powder
  • 100g heavy cream
  • 50g cream cheese
  • 200g dark chocolate
  • Powdered sugar for dusting
  • Fresh cranberries for decoration

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a jelly roll pan with parchment paper.
  2. In a bowl, beat the eggs and sugar until light and fluffy.
  3. Sift together the flour and cocoa powder, then gently fold into the egg mixture.
  4. Pour the batter into the prepared pan, spreading it evenly.
  5. Bake for 10-12 minutes or until the cake springs back when touched.
  6. Let the cake cool, then turn it out onto a kitchen towel dusted with powdered sugar. Roll the cake tightly with the towel and cool completely.
  7. For the filling, beat the cream and cream cheese together until smooth.
  8. Unroll the cooled cake, spread the filling evenly, and roll it up again without the towel.
  9. Melt the dark chocolate, let it cool slightly, and spread it over the rolled cake.
  10. Dust with powdered sugar and decorate with fresh cranberries.
  11. Slice and serve.
