Description

A festive twist on traditional deviled eggs, featuring creamy avocado filling decorated like Christmas trees.


Ingredients

  • 6 large eggs
  • â…” to ¾ cup mashed very ripe avocado (about 1 medium avocado)
  • ¼ teaspoon garlic salt
  • 2 teaspoons Dijon mustard
  • 2 teaspoons lime juice
  • Apple cider vinegar or lemon juice (to taste)
  • Green food coloring (optional)
  • 1 small yellow or orange bell pepper
  • 1 tablespoon minced red bell pepper
  • Grated Parmesan cheese

Instructions

  1. Boil about 4 cups of water in a saucepan. Gently add the eggs and boil for 12 minutes.
  2. Drain and cool the eggs in ice water for 5 minutes for easier peeling.
  3. Peel the eggs and cut in half crosswise. Slice a tiny bit off the bottoms for stability.
  4. In a food processor, combine yolks, avocado, lime juice, Dijon mustard, and garlic salt; blend until smooth.
  5. Pour the mixture into a piping bag and fill the egg whites, creating a pyramid shape.
  6. Decorate with minced red bell pepper as ornaments and yellow bell pepper stars on top.
  7. Sprinkle grated Parmesan cheese for a snowy appearance and chill before serving.

Notes

For easier peeling, use slightly older eggs. Adjust flavors according to preference.
