A festive twist on traditional deviled eggs, featuring creamy avocado filling decorated like Christmas trees.

- 6 large eggs
- ⅔ to ¾ cup mashed very ripe avocado (about 1 medium avocado)
- ¼ teaspoon garlic salt
- 2 teaspoons Dijon mustard
- 2 teaspoons lime juice
- Apple cider vinegar or lemon juice (to taste)
- Green food coloring (optional)
- 1 small yellow or orange bell pepper
- 1 tablespoon minced red bell pepper
- Grated Parmesan cheese
Instructions
- Boil about 4 cups of water in a saucepan. Gently add the eggs and boil for 12 minutes.
- Drain and cool the eggs in ice water for 5 minutes for easier peeling.
- Peel the eggs and cut in half crosswise. Slice a tiny bit off the bottoms for stability.
- In a food processor, combine yolks, avocado, lime juice, Dijon mustard, and garlic salt; blend until smooth.
- Pour the mixture into a piping bag and fill the egg whites, creating a pyramid shape.
- Decorate with minced red bell pepper as ornaments and yellow bell pepper stars on top.
- Sprinkle grated Parmesan cheese for a snowy appearance and chill before serving.
Notes
For easier peeling, use slightly older eggs. Adjust flavors according to preference.
