Description

Delightful cookies that combine chewy texture with warm cinnamon and sugar flavors, reminiscent of classic churros.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup granulated sugar
  • ¾ cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup cinnamon sugar (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In a large mixing bowl, combine granulated sugar, brown sugar, and eggs. Beat until light and fluffy for about 2-3 minutes, then add vanilla extract.
  4. Gradually mix in dry ingredients until just combined. Chill the dough in the refrigerator for 30 minutes.
  5. Mix granulated sugar with ground cinnamon for coating. Roll chilled dough into small balls and coat with cinnamon sugar.
  6. Place the coated balls on the baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes.
  7. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Chill the dough for better texture and avoid overmixing the ingredients.
