- 4 pieces Boneless, skinless chicken breasts
- 1/4 cup Fresh lime juice (about 2 limes)
- 1/4 cup Fresh cilantro (chopped)
- 3 cloves Garlic (minced)
- 1 teaspoon Ground cumin
- 1 teaspoon Paprika
- 1/2 teaspoon Salt (adjust to taste)
- 1/4 teaspoon Black pepper (freshly cracked)
- 1/4 cup Olive oil
- 1 piece Avocado (diced)
- 1 cup Jasmine rice
- 2 cups Chicken broth or water (low-sodium recommended)
- As needed Lime wedges (for serving)
- As needed Extra cilantro (for garnish)
Instructions
- In a large mixing bowl, whisk together lime juice, chopped cilantro, minced garlic, cumin, paprika, salt, pepper, and olive oil to create a delicious marinade.
- Place the chicken breasts into a resealable bag and pour the marinade over the chicken, ensuring each piece is evenly coated. Seal the bag and refrigerate for at least 30 minutes to 2 hours.
- Rinse jasmine rice under cold water until the water runs clear, then drain well.
- In a saucepan, bring chicken broth or water to a boil. Stir in the rinsed rice, cover it, and reduce the heat. Let it simmer for around 15 minutes until the rice is tender and fluffy.
- Preheat your grill over medium-high heat. Remove the chicken from the marinade and discard the liquid. Grill the chicken for about 6-7 minutes per side, ensuring it’s cooked through.
- After grilling, let the chicken rest for a few minutes before slicing it.
- To serve, slice the chicken and layer it over the jasmine rice, topping with diced avocado, extra cilantro, and lime wedges.
Notes
For best flavor, marinate the chicken for at least 2 hours or overnight. Serve with a light salad and chilled white wine.
