Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1/4 cup Fresh lime juice (about 2 limes)
  • 1/4 cup Fresh cilantro (chopped)
  • 3 cloves Garlic (minced)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1/2 teaspoon Salt (adjust to taste)
  • 1/4 teaspoon Black pepper (freshly cracked)
  • 1/4 cup Olive oil
  • 1 piece Avocado (diced)
  • 1 cup Jasmine rice
  • 2 cups Chicken broth or water (low-sodium recommended)
  • As needed Lime wedges (for serving)
  • As needed Extra cilantro (for garnish)

Instructions

  1. In a large mixing bowl, whisk together lime juice, chopped cilantro, minced garlic, cumin, paprika, salt, pepper, and olive oil to create a delicious marinade.
  2. Place the chicken breasts into a resealable bag and pour the marinade over the chicken, ensuring each piece is evenly coated. Seal the bag and refrigerate for at least 30 minutes to 2 hours.
  3. Rinse jasmine rice under cold water until the water runs clear, then drain well.
  4. In a saucepan, bring chicken broth or water to a boil. Stir in the rinsed rice, cover it, and reduce the heat. Let it simmer for around 15 minutes until the rice is tender and fluffy.
  5. Preheat your grill over medium-high heat. Remove the chicken from the marinade and discard the liquid. Grill the chicken for about 6-7 minutes per side, ensuring it’s cooked through.
  6. After grilling, let the chicken rest for a few minutes before slicing it.
  7. To serve, slice the chicken and layer it over the jasmine rice, topping with diced avocado, extra cilantro, and lime wedges.

Notes

For best flavor, marinate the chicken for at least 2 hours or overnight. Serve with a light salad and chilled white wine.
