Description

Delicious shrimp tacos with a zesty cilantro lime flavor, topped with a creamy slaw for a refreshing crunch.


Ingredients

  • 1 lb Shrimp, wild-caught, peeled and deveined
  • ½ teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Chili powder
  • 1 tablespoon Olive oil
  • 2 tablespoons Butter
  • 1 teaspoon Lime zest (from 1 lime)
  • 2 tablespoons Lime juice (from that same lime)
  • 2 tablespoons Honey
  • ½ bunch Cilantro, finely chopped
  • 3 cups Green cabbage, finely shredded
  • ½ cup Greek yogurt
  • 2 tablespoons Lime juice (from 1 whole lime)
  • 1 Avocado, sliced
  • 8 (6-inch) Tortillas (corn or flour)
  • Lime wedges, for serving

Instructions

  1. In a bowl, toss the shrimp with salt, pepper, smoked paprika, garlic powder, and chili powder.
  2. In a skillet over medium-high heat, heat the olive oil and butter. Once melted, add the seasoned shrimp.
  3. Cook the shrimp for 2-3 minutes on each side or until they are pink and opaque. Add lime zest, lime juice, and honey, stirring to coat the shrimp. Cook for an additional minute until the sauce thickens slightly.
  4. In a large bowl, combine the shredded cabbage, Greek yogurt, cilantro, and lime juice.
  5. Mix well until the slaw is evenly coated. Adjust seasoning with salt and pepper to taste.
  6. Warm the tortillas in a dry skillet or microwave until pliable.
  7. Fill each tortilla with a generous spoonful of shrimp and a hearty portion of creamy slaw.
  8. Top with avocado slices, and any additional cilantro if desired. Serve with extra lime wedges for a zesty finish.

Notes

Store any leftover shrimp and slaw separately in airtight containers in the fridge for up to 3 days. Consider marinating the shrimp ahead of time for deeper flavor.
