Description

Soft and chewy cookies infused with apple and warm spices, coated in cinnamon-sugar for a delightful treat.


Ingredients

  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 1/2 cups peeled and diced apples (Granny Smith or Honeycrisp)
  • 1/4 cup granulated sugar (for cinnamon-sugar coating)
  • 1 tablespoon ground cinnamon (for cinnamon-sugar coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together softened butter and granulated sugar until light and fluffy (2-3 minutes).
  3. Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, cream of tartar, ground cinnamon, ground nutmeg, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. Fold in the diced apples gently until evenly distributed.
  7. In a small bowl, mix together cinnamon and sugar for the coating.
  8. Scoop tablespoon-sized balls of dough and roll in the cinnamon-sugar mixture until coated.
  9. Place the cookie dough balls on the prepared baking sheets, 2 inches apart.
  10. Bake for 12-15 minutes or until edges are slightly golden.
  11. Remove from oven and cool on baking sheets for 5 minutes before transferring to a wire rack.

Notes

Chill the dough for thicker cookies and use firm apples for best results.
