Description

Tender, slow-cooked shredded chicken tacos seasoned to perfection, ideal for any occasion.


Ingredients

  • 23 pounds boneless, skinless chicken breasts or thighs
  • 23 tablespoons taco seasoning (store-bought or homemade)
  • 1 medium onion (roughly chopped)
  • Several garlic cloves (minced)
  • 1 cup chicken broth (or low-sodium broth, or water)
  • 1 can diced tomatoes with green chilies
  • Juice from 1 lime
  • Corn or flour tortillas (to serve)
  • Toppings (shredded lettuce, diced tomatoes, cheese, etc.) as desired

Instructions

  1. Prepare the Slow Cooker: Lightly spray the inside of your slow cooker with cooking spray or line it with a slow cooker liner for easier cleanup.
  2. Add the Base: Spread the chopped onion and minced garlic evenly across the bottom of the slow cooker.
  3. Layer the Chicken: Place the boneless, skinless chicken over the onions and garlic.
  4. Season It Up: Sprinkle the taco seasoning evenly over the chicken.
  5. Add the Liquid: Pour the chicken broth around the chicken, then add the can of diced tomatoes with green chilies on top. Do not stir.
  6. Cook: Cover the slow cooker with the lid and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  7. Shred the Chicken: Once cooked, remove the chicken and shred it into bite-sized pieces using two forks.
  8. Combine: Place the shredded chicken back into the slow cooker with all the cooking liquid and gently stir.
  9. Finish with Lime: Squeeze fresh lime juice over the mixture and stir again.
  10. Serve: Warm tortillas and fill them with the shredded chicken mixture, adding your desired toppings.
