Instructions
- In a bowl, whisk together the coconut milk, lime juice, minced garlic, soy sauce, salt, and pepper.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 1 hour.
- Preheat your oven to 375°F (190°C) or heat a skillet over medium-high heat.
- If using an oven, place the marinated chicken thighs in an oven-safe dish; if using a skillet, add olive oil and sear the thighs for 5 minutes on each side.
- Bake in the oven for 25-30 minutes or continue cooking in the skillet until fully cooked.
- Serve over cooked rice and drizzle with the remaining marinade if desired.
