Ingredients

  • 1 cup coconut milk
  • Juice of 2 limes
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • Cooked rice, for serving

Instructions

  1. In a bowl, whisk together the coconut milk, lime juice, minced garlic, soy sauce, salt, and pepper.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 1 hour.
  3. Preheat your oven to 375°F (190°C) or heat a skillet over medium-high heat.
  4. If using an oven, place the marinated chicken thighs in an oven-safe dish; if using a skillet, add olive oil and sear the thighs for 5 minutes on each side.
  5. Bake in the oven for 25-30 minutes or continue cooking in the skillet until fully cooked.
  6. Serve over cooked rice and drizzle with the remaining marinade if desired.

Notes

Allow chicken to marinate overnight for stronger flavors. For a gluten-free option, use tamari instead of soy sauce.
